As this is my first post then I’m guessing that the majority of people who are reading this are friends or family who I have forced to. (Thank you/you da best/love you lots).
However, if there is someone who has managed to stumble across this blog and has no idea who I am, then hello!!! I am Laura, and I make the greatest cookies in the world!
Now, I know this may sound big headed and arrogant. People who know me know that I’m not an arrogant person, but you can’t deny facts and these cookies are THE GREATEST COOKIES IN THE FRIGGING WORLD!
This is probably because they are THE most unhealthy things you will ever eat. If you’re looking for something that is fat free/sugar free/dairy free/vegan then you are in the wrong place my friend, (although I have made a gluten/dairy free alternative).
These cookies are full of:
Fat
Sugar
Dairy
Dreams
So here we go…
You will need
A large bowl
Wooden spoon
2/3 baking trays
Baking parchment
Spatula
Yo hands
To make approx 25 medium cookies
300g caster sugar
200g butter
275g self-raising flour
75g cocoa powder
1 large egg
3, (yes 3) large bars of milk chocolate - Cadburys or Galaxy is my go to, also this time it was cheaper to get 1 mahooosive bar rather than 3 smaller ones
3 large bars of white chocolate (now you see why they’re so unhealthy)
Potensh…a little dash of milk
Let’s do this…
So, first let’s get that oven on 200°C
Then break/cut up all your chocolate into different sized chunks. I’d suggest going for half a square and smaller. But hey, if you want to throw a whole square in there, go wild! You can break up the chocolate at any stage really, but by doing it earlier on it means you can snack on them ;)
Cream the butter and sugar together in a large bowl
Add in the egg
Add the flour and cocoa powder
Give it all a good ol’ stir
When it’s all mixed together, if it seems a tad dry then add a dash of milk.
Then (fingers crossed you haven’t eaten them all - I am definitely guilty of this) throw in your broken chocolate bits.
Now it’s time to get your hands dirty.
Get your hands all up in there and give it a good mix. You want to try and distribute the bits of chocolate evenly in the mix.
Boom! Your cookie dough is done, well done you!
First you need to decide what size cookie you want to make. The majority of the time I make the medium sized ones. If I’m making them for Christmas/Birthday presents, I’ll make the small ones and then stack 4/5 on top of each other and wrap them in cellophane. I’ve only made the large ones a few times, but they were bloody fabulous!
Pop your cookie dough balls on the trays that have been covered with baking parchment. I normally do 6 per tray for medium cookies, 8 for the small ones and 4 for the large ones. Give the dough balls a little press down before popping them in the oven.
So, timings…
For medium cookies I’ll set my timer for 6 minutes (4 mins for small/8 mins for large). Now, I know this doesn’t seem like enough time but just trust me, truuuuuust me.
The really important thing is when you take the cookies out, THEY WILL NOT SEEM DONE!! You will be so tempted to be like ‘Oooh I’ll just pop them back in for a few mins... DON’T DO IT!! JUST DON’T!! Take them out of the oven, leave them for 5/10 mins minimum and then use a spatula to transfer them onto a cooling rack or plate. And even then, they still won’t look done.
This recipe makes a fair few cookies, so bear in mind that your kitchen will become a conveyor belt for heavenly, delicious treats.
And that's it really! Keep alternating the trays as one lot finishes in the oven and as I said before, make sure you give the cookies enough cooling time before you move them.
