When I started this blog, I had this idea that it was going to be incredibly varied. I imagined recipes, crafts, travel, (lol, anyone remember travel?) and interior stuff. Little did I know that 95% of my posts would be food-related and 80% of that 95% would revolve around chocolate.
And if you think that I’d come to that realisation and be like “Laur, come on, we need to change it up, let’s think of some different Christmas content” well, you’d most definitely be WRONG!!
Here we are, yet another chocolate-filled food post, and you know what? There's not a single bit of shame.
So, I thought I’d share some of my quick and easy Christmas treats with you. I’ve had so much fun making these. They’re the perfect Christmas pick-me-up and we certainly need that after everything that’s been going on over the past couple of days… [wait, what am I saying?? After this entire year!]
Now I’m going to be completely honest with you, originally it was ‘4 Easy Christmas Treats’ but my stained glass window biscuits turned into a complete disaster involving me bashing a hole in my table, so we’re just going to breeze past that, put a coaster over the hole and crack on.
Let’s do this.
Chocolate Teacake Christmas Puddings
Okay so how adorable do these look?
Now, I normally make miniature versions of these, but can I find mini teacakes anywhere?? No siree! But hey, I’m not complaining if it means more teacakes for me!!
You Will Need
- Chocolate Teacakes (e.g. Tunnocks)
- White Chocolate (I used about half a bar for 10 teacakes and still had some left over)
- Red and Green Ready to Roll Icing
Method
- Bob your white chocolate in a bowl and pop it in the microwave on a low heat (white chocolate can burn so easily), you want to microwave it in 30 sec intervals and make sure you stir it after every time. You can also melt it in a bain-marie, I’m just far too lazy.
- Unwrap the teacakes
- Blob about half a teaspoon of white chocolate on top of the teacake. Then gently use the spoon to encourage the chocolate to drip down the sides to create that Christmas pudding effect.
- Make some little berries and holly leaves with the icing, pop them on top and bob them in the fridge so the chocolate can fully set.
And voila!! Your puddings are done. (I told you they were easy.)
White Chocolate Snowflake Pretzels
I. LOVE. THESE. SNOWFLAKES!!! I mean come ooooooon, aren’t they just wonderful?
You Will Need
- Snowflake Shaped Pretzels
- White Chocolate
- Snowflake Sprinkles
Method
- So let’s start by talking about the pretzels. You can use whatever shape of pretzels you like but the only snowflake shaped pretzels I could find were from Sainsbury’s and they have two options. They have a bags of salted snowflake pretzels or a bag of Christmassy-themed salted caramel pretzels (including snowflakes). So you can either just buy the bag of salted snowflakes or buy the salted caramel shapes and pick out the snowflakes. I do both because the salted caramel pretzels are a dreeeeeam.
- This is probably the quickest and easiest out of all the treats. First you’re going to (surprise, surprise) melt some white chocolate. Remember to keep the microwave on a low heat and melt in 30 sec bursts, stirring after each time.
- Once the chocolate is melted, cover half the snowflake in the white chocolate and decorate with the little snowflake sprinkles.
- Leave them to one side to set. I’d avoid putting them in the fridge as they can be difficult to get off the plate if the chocolate has set in the fridge. You also may need to use a knife to very gently prise them off the plate.
Badda-bing, badda-boom - they’re done!!
Rice Krispie Christmas Trees
Most people make these with marshmallow, but no surprise what I’m using instead? You’ve guessed it…CHOCOLATE. If you fancy using marshmallows instead then go ahead. Marshmallows and myself aren’t the best of friends when it comes to baking so I’m sticking with my good friend Ms. Chocolate.
You Will Need
- 200g Rice Krispies
- 250g White Chocolate (or Marshmallows and Butter)
- Mini Reese’s Pieces
- Oil/Powder-based Green Food Colouring
- Sprinkles (for decoration)
- Baking Paper
Method
- Grab your baking parchment and cut out semicircle shapes. The recipe makes about 8 medium-sized trees.
- Roll the parchment semicircle into cones and fasten with cellotape, (this took me an embarrassingly long time to work out the construction of these cones. Seriously, it took me like 20 mins and I went through at least 1/5 of a roll of baking parchment).
- Melt the white chocolate in the microwave or bain-marie.
- Okay, so we need to have a little chat about food colour. If you’re with me and you’re rolling with white chocolate, you’ll need to find oil/powdered based food colouring. If you use water-based food colouring the chocolate will seize and become really lumpy (NOT what you want for your beautiful Christmas trees). If you’re using marshmallow you should be able to use any food colouring you like.
- Once the white chocolate is melted, add in the food colouring a little at a time until you’ve reached your desired colour. Now when I say a little at a time, I really mean a little at a time and make sure you give it a good mix before you add more colouring. Sometimes you’ll put the food colouring in, you’ll give it a stir and nothing happens. So you think, “Oh I’ll just add some more…” and then a bit more and then suddenly out of nowhere the food colouring will be like “BAM!! HERE I AAAAAMMMM!!!” And you’re left with an extremely dark mixture, much darker than you wanted and they look more like Halloween trees. (Can you tell I’m speaking from experience)
- When all your food colouring is mixed in, gradually add the rice krispies into the mixture.
- Spoon the mixture into the cones and use the back of the spoon the press the mixture down. Make sure you really pack it in so it’s as compacted as possible (honestly, I spent about an hour trying to find a way to write that so it didn’t sound inappropriate).
- Refrigerate for at least an hour.
- Take out of the fridge and peel off the parchment paper to reveal what are now beautiful Christmas trees.
- Decorate however you want! I used some left over melted white chocolate to stick on a variety of Christmas sprinkles and then dusted them with icing sugar for the snowy effect.
- Finally, use some melted white chocolate to stick on a mini Reeses Piece to the bottom of your tree to become the trunk.
And there you have it, Rice Crispie Christmas tree! They're so much fun to make and even more fun to eat.
